Recipe for an carrot cake








The carrot cake is a sweet cake with shredded carrot mixed into the batter. The carrot is softened in the baking process, and the cake is typically a dense and smooth. Carrots improve the taste, texture and appearance of the cake. The ingredients for preparation are:
 
ingredients

160g flour
3 eggs
250 g brown sugar
120 g of oil
2 teaspoons baking powder
1 teaspoon ground ginger (optional)
210g grated carrot
30 g chopped walnuts


For topping: 

170g butter
225g fresh cream cheese
250g caster sugar
2 tablespoons grated orange peel
1 pinch of salt

Process

. Put the sugar and oil in a bowl and beat for 2 minutes with the help of electric beater. Add eggs slowly, followed by the sifted flour with the yeast. Also add the carrots and ginger, nuts, and continue mixing until just incorporated.

. Pour the mixture into a pie pan of 22 cm in diameter lined with baking paper and bake in a preheated oven at 180 º C for 55-60 minutes.

. Let the butter is hot. Place in a large bowl and beat with an electric mixer for 2 minutes until soft and fluffy. Add the cream cheese and continue beating a couple of minutes. Add sugar, orange zest and a pinch of salt and stir 3-4 minutes more

. Remove the cake from the oven, let cool completely and cut in half. Fill with some of the cream, recompose and cover with the remaining cream with the help of a blade of a long knife or pastry.
